Truth be told, I’ve never had Chipotle’s beef barbacoa, (even though Chipotle’s Mexican Grill is one of my all time favorite places to eat), so I can’t vouch for this as a copycat recipe.
But I can tell you, this beef, braised in a chipotle and wine sauce until fork pull-apart tender, is perfect for that burrito, rice bowl, taco, salad, or super nachos.
The choice is yours, just add your favorite toppings and satisfy that Mexican craving. You know you want to.
3-4 pound chuck roast or beef shoulder, fat trimmed
oil for searing
2 bay leaves
6 cloves garlic
1 medium onion, diced
3 t ground cumin
1 T dried oregano
1 t black pepper
1/8 teaspoon ground clove
2 chipotle peppers*, for mild heat. Add more if desired.
1/4 c apple cider vinegar
1/2 c chicken or beef broth
1/2 c red wine
2 T fresh lime juice
*canned, packed in adobo sauce
1 PREPARE THE ROAST
Trim fat and cut into chunks. Season beef with salt and set aside.
2 MAKE THE SAUCE
Combine sauce ingredients in a blender. Blend until smooth and set aside.
3 SEAR THE BEEF
Heat oil in a heavy bottomed pan (we used cast iron) and sear beef on all sides.
4 PUT IT IN A CROCKPOT
Put beef, sauce, and bay leaves in a crockpot. Cover and cook until meat is tender and falling apart (about 5-6 hours on high or 8 hours on low).
Shred beef using 2 forks. Mix into the sauce and re-season as needed.
Serve immediately or keep warm in the slow cooker until you’re ready to serve.
TOPPINGS AND SIDE SUGGESTIONS
Cilantro lime rice (Quick version: While rice is hot, add a dollop of coconut oil, a squeeze of lime juice, and a sprinkle of chopped cilantro)
Tortillas: flour, corn, rice, or chips
Pico de Gallo (essentially a fresh salsa of fresh tomatoes, onions, jalapeno, and lime juice)
More Veggies: Guacamole (or avocado slices), corn, bell peppers, onions
Beans: black, pinto
Dairy: cheddar, monterey jack, sour cream
Greens: Romaine, iceberg, thinly sliced green cabbage
Etc: chopped cilantro, chopped scallions, lime juice
