I was really tempted to just wing it this week, since Pete is away on business. But having a plan has made dinnertime so much easier, it’s more work not to make a menu. So here’s my menu for dinner this week.
shrimp salad, potato salad, spring mix salad
Yeah, can you believe it — no grilling for Labor Day. It was actually a real “labor” day for us — painting, building shelves, and installing cabinets.
parmesan crusted pesto tilapia w/linguini, zucchini
caesar salad with breaded chicken cutlets and crusty bread
Frozen breaded cutlets makes this almost a no-cook night.
