Berry Beet Ginger Smoothie

Smoothie du jour: Berry Beet Ginger
I came up with this smoothie because it’s all I had in the freezer/fridge that was smoothie worthy. It’s delicious!

  • 3/4 c frozen chopped beets*
  • 1 1/2 c frozen blueberries
  • chunk of fresh ginger root (about 1/2 x 1 inch) peeled
  • 1 can V8 Fusion, strawberry banana
  • 1 c ice

Add ingredients to a high speed blender. Blend until smooth.

The frozen ingredients, combined with the bite of ginger, makes this a refreshing drink. High in antioxidants, too.

Note: Fresh ginger root is spicy. It really makes this drink, but if you want less heat, use a smaller piece.

*Cube cooked beets and freeze in a ziploc bag. See Smoothie Basics 101.
