The best way to come up with a menu for the week:
- Assess what you have that needs to be eaten
- Make a plan incorporating those items in order of urgency
- Make a shopping list
- Go shopping
In that order. I didn’t do my homework, and my early bird mom is already out shopping. So I’m scrambling a little today.
This week I have only two givens: tonight has to be quick and easy, and I have a bunch of perfect tomatoes begging to be showcased. We already ate pizza this weekend, so there goes that idea. For the tomatoes, I’m thinking a version of shrimp ceviche. A salute to summer’s end.
Here’s my tentative plan:
grilled pork chops, spring mix salad, french fries
Thai chicken satay with peanut sauce & coconut rice, green vegetable
Note: Dinner this Week helps me to actually try the great recipes I read. So most of these are untried at the time of posting the menu. If I do like the recipe, eventually it will be featured with my tweaks and photos.
