Smoothies are far more than your standard Orange Julius or glorified milkshake. They’re a great way to sneak veggies (and more nutrition) into your diet.
This morning’s smoothie consisted of 3 cups of baby spinach, a small, roasted beet, frozen banana, about a half cup of mixed berries (raspberries, blueberries, and boysenberries), a couple of tablespoons of pumpkin seeds, and enough almond milk (maybe half cup) to blend it all together. I threw in a scoop of powdered greens for extra measure, and I was good to go! This was a huge smoothie, enough for two.
If that kind of breakfast sounds nutritious but scary, like you can’t imagine yourself liking such a vegetably concoction, I hear you. I’ve been making smoothies since last summer, gradually adding more vegetables. I’ve been experimenting with different vegetables in varying proportions, and I’ve been surprised how much nutrition I can pack in without sacrificing taste. My son, who likes his junk food, still likes them, so they’ve passed the most stringent taste test.
If you’re a newbie to smoothies, try this to start:
1 ripe banana, fresh or frozen (frozen makes a creamy concoction reminiscent of ice cream — who can object to that?)
½ c berries, fresh or frozen
milk (cow’s, almond, soy, coconut, whatever you drink — or try something new!) Use enough to blend, maybe ¼ – ½ c, depending on how thick you like it.
Pour into a beautiful glass, (I like footed glasses or pilsners — the glass does make a difference, in my opinion) and enjoy.

I’ll be blogging more on transitioning into healthier foods painlessly and deliciously. But for now, let me just say that you can add a whole cup of baby (not regular spinach, which has a much stronger flavor) spinach to your smoothie and it will be virtually undetectable. Depending on what else is in your smoothie, you might end up with a marvelously green smoothie. But trust me, you won’t taste it. And if you’re using blueberries or chocolate, you won’t see it, either.
